Ingredients

US Customary - Metric

  • 2 pounds beef short ribs bone-in
  • 1 onion chopped
  • 2 carrots chopped
  • 4 celery stalks chopped
  • 4 thyme sprigs fresh
  • 2 garlic cloves
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon peppercorns
  • 1 gallon water

Instructions

  • Place all ingredients in a large slow cooker or stockpot. Cover and boil on low for 48 hours. During the first 2-5 hours, skim off and discard any impurities or foam that rises to the top of the broth.

  • Allow to cool, then strain through a fine metal strainer into a large bowl. Discard food particles and all bones.

  • Store in glass mason jars and use within 5 days, or freeze in ziplock freezer bags for up to 1 month.
